Ingredients:

1 russet potato
¼ onion
2 eggs, lightly beaten
⅓ cup flour*
½ teaspoon baking powder
1 teaspoon salt
freshly ground black pepper
canola or vegetable oil, in a spray bottle
chopped chives, for garnish
apple sauce
sour cream

Directions:

1. Shred the potato and onion with a coarse box grater or a food processor with the shredding blade. Place the shredded vegetables into a colander or mesh strainer and squeeze or press down firmly to remove the excess water.

2. Transfer the onion and potato to a large bowl and add the eggs, flour, baking powder, salt and black
pepper. Mix to combine and then shape the mixture into patties, about ¼-cup of mixture each. Brush or
spray both sides of the latkes with oil.

3. Preheat the air fryer to 400°F.

4. Air-fry the latkes in batches. Transfer one layer of the latkes to the air fryer basket and air-fry at 400°F for 12 to 13 minutes, flipping them over halfway through the cooking time. Transfer the finished latkes to a platter and cover with aluminum foil, or place them in a warm oven to keep warm.

5. Garnish the latkes with chopped chives and serve with sour cream and applesauce
